Das haben Wissenschafter in drei Gutachten vorgeschlagen, die die Europäische Behörde für Lebensmittelsicherheit (EFSA) vor dem Jahreswechsel veröffentlicht hat. Die Gutachten wurden im Rahmen der EU-Rechtsvorschriften über den Schutz von Tieren zum Zeitpunkt der Tötung durchgeführt. Danach müssen die Unternehmen sicherstellen, dass die Tiere nach der Betäubung bewusstlos und vor der Weiterverarbeitung tatsächlich tot sind. Konkrete Maßnahmen bei Schweinen Die Schlachthofarbeiter sollen beispielsweise bei Schweinen zur Betäubung der Tiere durch Elektroschocks oder Kohlendioxyd, dem Anstechen, dem Ausbluten lassen und dem Aufhängen jeweils auf Atmung, Muskelspannung, Hornhaut- und Augenlidreflexe sowie auf Zuckungen und Krämpfe der Muskulatur achten. Wird mit Kohlendioxyd betäubt, kann zur Kontrolle auch leicht in die Nase gestochen oder ins Ohr gekniffen werden. Mindestens zwei der aufgezählten Indikatoren seien zu nutzen. Die Kontrolle soll ausnahmslos für alle Tiere gelten; der jeweilig Tierschutzbeauftragte eines Unternehmens könne es mit einer gewissen Stichprobe bewenden lassen. Analoge Kontrolle bei Geflügel Klick-Tipp Themendossier: Afrikanische Schweinepest ... Jede Woche neu - der Vereinigungspreis ... Die aktuellen Schweinepreise im Marktbereich ... Sonne, Wolken, Regen? - zum Agrarwetter ... Auch bei der Geflügelschlachtung soll auf Muskelzuckungen, Atmung und spontanes Blinzeln geachtet werden und zwar nach der Betäubung im elektrischen Wasserbad oder durch Gasgemische, vor dem Halsschnitt und beim Ausbluten. Zusätzlich sind Hornhautreflexe, Flügelschlagen, Schlucken und Kopfbewegungen zu berücksichtigen. Bei der Schlachtung ohne Betäubung muss sicher sein, dass die Tiere vor dem Brühen tot sind. Vergleichbar zum Geflügel und zu den Schweinen sind die Anforderungen bei der Schlachtung von Schafen und Ziegen.
